I've successfully used this script in this past, It works for both Exchange 2007 & Exchange 2010

You basically get a CSV file containing all your servers and installed packages. You can then re-format the CSV as you like to get a nicely formatted list. if you are good at Powershell you could create a HTML report instead of a CSV file and email it to you every week or so..
